I love spring! I've been enjoying the wonderful weather and budding "new-ness" of everything so much.
I even took advantage of my window sill herb garden last week by making some rosemary chicken kabobs and mint mojitos. Yummy! I've used some of this new inspiration to create some really fun spring items for my shop as well. Here are a few of my newest projects and a taste of the spring fun we're having around my home.
1. Baby Barefoot Sandals
I had so much fun taking pictures of my new baby barefoot sandals with my precious little niece. These sweet simple sandals are perfect for little ones who aren't ready to walk yet, and come in two styles and a variety of colors that can be found here.
2. Lacey Little Leggings
This set is my first complete pair of Lacey Leggings from the new pattern I created this weekend! I think they turned out really well, and I can't wait to make a few more pairs in solid colors so you can really see the lacy wave pattern. This pair will fit 12 -24 months, and I'll be making a smaller size to fit 0-12 months as well. These are the perfect photo prop for those "not quite in the buff" shots. Add them to a ruffled diaper cover and a flowered headband for the perfect girly look.
3. Egg Dye Chandelier
I thought it was such a waste to just toss our left over egg dye, so we got out the coffee filters and Q-tips and got crafty! First we tried twisting the filters and dipping the ends in the dye (kind of like tie-dye), but the dye absorbed too quickly to use more than two colors. The Q-tips made great paint brushes for the dye, and after 2 hours of drying on plastic place mats we had these colorful creations! I used a hole punch and tied silver string with adjustable loops on the other end in the holes, and hung them from my VERY boring dining room light fixture. After adjusting the length of the strings we were left with this light and airy, colorful chandelier! Bonus - each filter spins independently so when the windows are open it has really neat movement!
4. Spring Roll Won Tons
Last, but not least are my Spring Roll Won Tons! I LOVE a good spring roll, and when I discovered that my grocer carried won ton wraps, I had no excuse for not making these myself at home. The first few times I used meat (pork) and fried them in vegetable oil, but found that they were greasy and burned pretty easily if I didn't watch them closely. So in the interest of both saving time, and my health I omitted the meat and tried baking them. This method was much simpler, quicker, and more healthy! They are so yummy! I may never order take-out spring rolls again!

You'll need:
Won Ton Wrappers
Bagged Coleslaw Mix (found in the fresh veggie dept. and MUST be sauce-free)
4 Tbsp Soy Sauce
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Ground Ginger
Dash of Black Pepper
Preparation: (Makes 12, but can be easily halved)
Preheat oven to 425F. Spray non-stick spray in desired number of muffin tins. Place won ton wrappers in muffin tins (press down to make a cup-like shape). Place a small amount of coleslaw mix in each wrapper cup (about 1/8 cp each). In a small bowl mix soy sauce, garlic, onion, ginger, and pepper with a spoon until well blended. Add a teaspoonful of soy sauce mixture over the top of coleslaw in each cup. Lightly wet all 4 corners of each won ton wrapper with your fingers. Bring together the opposite corners of each wrapper pressing firmly to close the won ton. Bake on middle rack for 9-12 minutes. Remove and let cool.
These tasty treats can be eaten alone or dipped in soy sauce or even BBQ sauce!
